What’s not to love about a thick slice of rich chocolate cake? The cake is rich and moist and perfect. The frosting… well, not so much. I’m still on the hunt for a good frosting, do you know of any? I used King Arthur Flour’s unbleached cake flour and it is wonderful — no weird chemically aftertaste.
Have you ever had the peanut butter cookies at Costco? They are one of my favorites because they are so chewy and peanut-buttery. I’ve always thought they had a touch of molasses in them. After searching for a recipe and not finding exactly what I was after, I decided to get creative and blended a couple of them together. The results are passable — but nothing to get overly excited about. Too much molasses in my opinion, next time I will reduce it to 1/4 cup. But certainly still worth eating. Of course. A couple of them at a time. Every time I passed by the cookie jar last night. At least I drank some milk with them.
And then there is the blueberry cake. Oh, this one is pure heaven on a plate — especially when we are able to go and pick our own blueberries. (Quick tip on the recipe: I substitute a full cup of butter for the 2/3 cup of shortening and I also add a crumb topping of flour, butter, brown sugar and cinnamon.)
So, yeah, all of this could explain the fact that at 9 month post-partum I’ve still got a few pounds of baby weight left. ; ) Oh well, my taste buds think it’s worth it even if my capris don’t.
